Pumpkin Chocolate Chip Bread
This pumpkin bread is so delicious and easy to make! If you want to taste fall in one bite, this is it! Perfect for taking to people as a treat or a Thanksgiving dessert. You'll need:
- 1 cup vegetable oil
- 2/3 cup water
- 2 cups pumpkin puree
- 3 cups sugar
- 3.5 cups flour
- 2 tsp baking soda
- 1 tsp baking powder
- 2 tsp salt
- 1/2 tsp ground clove
- 1 tsp ground nutmeg
- 1 tsp ground Cinnamon
- 1 tsp allspice
- Mini Chocolate Chips (optional)
Measure the dry ingredients into your mixer. After adding the sugar, flour and spices, turn on the mixer on low just to get all the dry ingredients mixed together. Just a quick spin will do! Next, add the water, oil and pumpkin puree and turn on low, working your way up to a faster speed. Quick Tip: You always want to start of slow when using a mixer so flour doesn't end up all over the kitchen! You can always increase the speed once things get moving.
Once the batter is mixed, fold in a bag of mini chocolate chips with a large spoon. Grease your loaf pan and pour in the batter. This will be enough batter for one large loaf and usually a second smaller one. I've also taken the excess and made pumpkin muffins. Bake the loaf for 1 hour and 20 minutes on 325 depending on oven. Quick Tip #2: If you're unsure whether the bread is ready to take out of the oven, take a wooden toothpick and stick it in the middle of the bread. If it comes out clean, then it's cooked all the way through. If some of the batter sticks, leave it in the oven for 5-10 more minutes or until the batter won't stick.
