Pumpkin Roll


Pumpkin Roll is Thanksgiving to me. We make it every year, and every year we wonder why we only use this recipe on this special holiday?! If you're looking for a sweet treat, this recipe is a little more decadent than my Pumpkin Chocolate Chip Bread. It has a sweet, cream cheese icing that is to-die-for good and a crunchy pecan topping! You'll need:

Bread:

- 2/3 cup pumpkin puree

- 3 eggs, beaten on high for 5 mins

- 1 cup sugar

- 1 tsp lemon juice

- 3/4 cups flour

- 2 tsp cinnamon

- 1 1/2 tsp baking powder

- 1/2 tsp ground ginger

- 1/2 tsp salt

- 1 cup pecans, chopped

Icing:

- 1 cup powdered sugar

- 1/2 tsp vanilla extract

- 1 package of cream cheese

First, you'll want to beat the eggs on high for 5 minutes. This step is super important and makes almost a meringue fluff once they are fully beaten. Next, add the sugar, pumpkin and lemon juice to the egg mixture.

In a large mixing bowl, add all the dry ingredients and stir around with a fork. Next, add the dry ingredients to the pumpkin mixture. Mix together and pour batter into a well greased AND floured baking sheet (15x10x1). Sprinkle the chopped pecans generously over the top and bake at 375 for 15 minutes.

While the bread is still warm flip over onto a dish towel that has been sprinkled with powdered sugar, being sure not to force it out of the baking sheet. Quick Tip #1: If you force it, it will tear. Flip it over and give it a few minutes to release. After it cools a little it will release onto the dish towel.

Roll the bread while it is still warm and refrigerate. Allow the roll to cool completely before unrolling to add the icing.

While the bread cools you can make the sweet cream icing. Here you'll simply combine the cream cheese, powdered sugar and vanilla extract together in a mixer and refrigerate until ready to use! Quick Tip #2: If your bread does tear anywhere, this stuff is like glue! Just spread on a little extra and you wont be able to tell!

Roll the bread up without the towel and refrigerate until ready to serve! Slice in 1 1/2 inch pieces and serve as dessert or a sweet breakfast (great with coffee) - Enjoy!
