Thanksgiving Panini
I think I might love this sandwich more than I love the actual Thanksgiving meal itself. You only need a few extra things to make these leftovers turn into an incredible panini packed with flavor! You'll need:
- Leftover turkey meat
- Brie
- Cranberry Sauce (use my Cranberry Chutney)
- Arugula
- Spicy Mustard
- 2 tbsp of butter
- Bread
Quick Tip: Take the turkey out of the refrigerator about an hour you're ready to eat so that it isn't ice cold when you start. When you are ready to eat start by removing the rind off the brie (when baking a whole wheel of brie, I usually just eat the rind, but here it melts easier and taste better).
Next, you'll heat 1 tbsp of butter in a skillet to cover the area where the bread be placed. Lay the bread down with the brie going on bottom so it melts completely. Spread spicy mustard on the other piece of bread and add a few layers of turkey in between.
Turn the heat down so that the skillet is warm, but not too hot to burn the bread. The butter will give the bread a crisp outer layer. Remove the panini and melt the other tbsp of butter before flipping over to heat the other side.
Once the turkey and brie are warm and melty, remove from the skillet and add a handful of arugula and few spoonfuls of Cranberry Chutney.
Fold the sandwich back together and slice in half diagonally - Enjoy!
