Roasted Red Pepper & Tomato Soup
This. Soup. I cannot even begin to describe how delicious and rich this soup is! It's perfect for chilly weather as something to warm you right up! You'll need:
3-4 roasted red bell peppers (Costco has a giant jar, but any grocery store will have them)
3 cloves garlic, peeled and minced
1 large white onion
2 tbsp olive oil
4 cups chicken broth
1 (14 oz) can of tomato paste
1 cup dry white wine
2 1/2 cups of milk, heavy cream or coconut milk
2 tbsp butter
S&P to taste

Begin by slicing the onion and red peppers before adding to a large saucepan, enough to hold and cook the rest of the soup, with the 2 tbsp of oil. Saute for a few minutes to soften the onions. Next add the garlic, stirring frequently for 5 minutes, being careful not to burn the garlic. Add the chicken broth to the veggie mix and let simmer for 5 more minutes. Reduce the heat and blend with hand blender. If you don't have an immersion blender, a regular blender will work, just keep in mind the hot liquid will expand and can get messy!
Funny story -- the first time I made this soup was in college. My roomie and I didn't have a hand blender yet so we used the only blender we had: an old school, metal, milkshake blender my grandpa probably got from an estate sale before gifting to me. Great for margaritas.... not so much piping hot, RED soup! We added the soup straight from the stovetop to the blender and turned it. Not only did the metal become untouchable, but when we removed the lid it spewed red liquid everywhere. Learn from our mistake and buy a hand blender here!!
Blend until smooth. Add the tomato paste, wine and milk and cook for 5 more minutes to cook off the wine. I substituted coconut milk to attempt a healthier, dairy free version of this soup and I cannot taste the difference, so I would highly suggest it as an alternative!
Serve with crusty bread or the classic grilled cheese! I swear by Publix White Mountain Bread and the Publix creamy yellow american deluxe slices to make the best grilled cheese ever! {Be sure to buy REAL cheese and not "processed cheese food"}
Serve warm in the winter with croutons or grilled cheese {or} as a chilled gazpacho in the summertime! Enjoy & keep warm!
