Pacific Twist Tacos


Tacos might be one of my favorite meals, especially in the Summer! Everything is so fresh and colorful and who doesn't love tacos?! They are a quick, easy meal during the week for a delicious dinner!

These tacos have a bit of an Asian flare to them with a teriyaki-soy marinade and a drizzle of sriracha. The salty/spicy/sweet pairing is a perfect balance on a hot night!

The marinade I used for the shrimp is also my go-to for salmon. With marinades you always want to have a few key components - a fat/oil of some sort, an acid and seasonings. Remember, the fresher, the better! The recipe for my marinade is below:

- 1 tbsp of sesame oil

- 1 tbsp of canola oil

- 2 tbsp of soy sauce

- 1 tsp of minced garlic

- 1 tsp of freshly grated ginger

- squeeze of lime juice

- 1 tsp of brown sugar

- 1/2 lb of raw shrimp

For the mango salsa I diced an onion, a jalapeño, a red pepper and a mango (I used a red onion for color, but a white onion flavors just fine too). Next, lightly season the onion, peppers with a dash of salt.

Quick tip: use scissors for your herbs. A lot of times herbs are super fragile and either lose their flavor or color by bruising the leaves while chopping, so scissors are perfect and easy to clean! Snip some cilantro and add it to the salsa. Squeeze a lime over it all and place in the fridge until you're ready to eat.

Next, toss the shrimp into a skillet on medium/high heat. Shrimp cook pretty quickly so be sure not to over cook them. Depending on size, I usually flip them after 2-3 minutes and simmer about 3 more minutes on the other side. While the shrimp are cooking go ahead warm the flour tortillas. I like mine to have a little char on them, so I use a cast iron skillet, but you can also toss in the microwave with a damp paper towel. Heat a cast iron skillet and toss a few tortillas in at a time, flipping to get a little crisp on each side.

Assemble the tacos with the shrimp and mango salsa and drizzle Sriracha on top. I also keep a Yum-Yum sauce in my fridge, (because I'm a crazy condiment lady, and I have an extreme obsession with Asian food) so I add a little of that on top as well - Enjoy!
