Christmas Tree Dip & Poinsettia Mimosa


This festive dip is the perfect savory appetizer for a holiday party! With the red, green and white colors and delicious flavors, you'll have an app that will blow buff dip out of the water! You'll need:

- 8 oz goat cheese

- 8 oz cream cheese

- 3 cloves of garlic, minced

- 1/2 cup of pesto

- 1/2 cup of sun dried tomatoes

- crackers or baguette for serving

This layer dip can be made in any dish, I just prefer to make it in a Christmas Tree shape to be extra festive. I've had mine a long time, but check this one out if you want to buy one! Line the inside of the pan with plastic wrap so you can easily transfer the dip to a serving platter later.

In a large mixing bowl, combine the goat cheese, cream cheese and garlic (works best if room temperature). Spread 1/3 of the cheese mixture in the pan making sure to keep to the shape of the tree. Next, add a layer of pesto, then another layer of the cheese mixture, then sun dried tomato and then top with the remaining cheese. Quick Tip: I find that it works best if the bottom layer that will in up being on the platter is the cheese spread so that it doesn't slide around on the plate. The pesto and tomatoes can get kind of oily.

Refrigerate for at least 2 hours before inverting onto a serving dish. Top with parsley and serve with assorted crackers or bread. This recipe keeps for up to one week.

Next you can get started on something to sip on. For these use a bottle of sparkling wine - I use Costco's Prosecco because is light, refreshing and cheap. Fill your glass with prosecco and add a splash of cranberry juice. I love Ocean Spray Cran-Raspberry for an added sweetness, but any cranberry juice will do.

Earlier in the day I coated some fresh cranberries in a simple syrup and tossed in granulated sugar (so the sugar would stick) and then popped in the freezer and topped each glass with a couple - Enjoy & Merry Christmas!!
