French Onion Soup


Warm up with some French Onion soup! Whenever it gets chilly , I only want soup! This recipe is so flavorful and actually comes from the American Pi cookbook. My Aunt helped with the production of the book and it has been a family favorite for years! You'll need:

- 2 large white onions, thinly sliced

- 1 large Vidalia or yellow onion, thinly sliced

- 4 tbsp of butter

- 2/3 cup Maderia wine**, divided

- 8 cups beef broth

- 2 tbsp balsamic vinegar

- Sourdough bread

- Gruyere cheese

Melt the butter in a large pot over medium heat, making sure not to heat too quickly or burn the butter. Add all the sliced onions to the pot and simmer for 15-20 minutes, stirring frequently, until onions are opaque and soft. I add a pinch of S&P during this step to falvor along the way.

Reduce heat and add the Maderia wine 2 tbsps at a time. Cook about 3 minutes in between each set of 2 for a total of 6 tbsps. This will allow the onions to take on the flavors and cook off the alcohol from the wine. Keep the remaining wine for later. Continue cooking the onions for another 10-15 minutes or until golden brown and caramelized.

Add the broth and bring to a boil. Reduce heat and let simmer for 1 hour. Season with S&P before adding the vinegar and remaining Maderia.

Pour into soup bowls and place bread on top and cover with cheese. Put in the oven on broil for 2-3 minutes or until cheese is melted and bubbly. Carefully remove soup from oven and enjoy!

**Maderia Wine can be found at Kroger in the wine section. I havent been able to find it at Publix, but it is similar to marsala or sherry, so be sure to check near the cooking wines at local grocery stores! See below for the wine!
