Key Lime Pie


Need a quick and easy dessert to take to a dinner party? This Key Lime Pie recipe is one of those killer recipes on the back of the bottle of Nellie & Joe's Key West Lime Juice Bottle. You can take two routes here: Semi-Homemade - or - Homemade, depending on how much time and effort you're willing to put in. If you're strapped for time, go ahead and buy a 9 inch graham cracker pie crust. If you're going the Homemade route, you'll need:

Crust:

- 1/3 C butter, melted

- 10 graham cracker sheets, crushed

- 1/3 C granulated sugar

Filling:

- 1/2 C Nellie & Joe's Key West Lime Juice

- 3 egg yolks, beaten

- 1 can (14 oz) sweetened and condensed milk

- 1 lime, garnish

In a food processor, finely crush the graham crackers. Next, add the sugar and pulse until mixed thoroughly. Melt the butter and pour into the food processor while it is running. Once mixed, pour crumbly mixture into a pie pan and evenly distribute. Firmly pack crust against the bottom and side edges using a flat object like a measuring cup. Bake the crust on 350 for 10 minutes or until golden brown. Let cool 10 minutes.

While the crust cools, begin mixing the pie filling. Separate 3 eggs and discard the whites. Whip the yolks for about 30 seconds before adding 1/2 a cup of lime juice and sweetened and condensed milk. Mix well and the pour filling into the cooled pie crust, spreading evenly. Bake at 350 for 15 minutes. Let cool 15 more minutes before putting in the refrigerator to completely cool. Allow at least 2 hours for best results.

Before serving, top with whipped cream or cool whip, a lime slice and lime zest for garnish - enjoy!!
