Pork Potstickers


Potstickers are such an awesome meal because you can really tailor them to your tastebuds! They're a fun and different dish to make if you're looking to change things up a bit! Since I tend to cook a lot of Asian inspired meals, I decided I'd venture out and learn how to make potstickers, and to my surprise they are super easy! Use your creativity and add whatever veggies you like/have - I used:

- 1 package of ground pork (chicken would work too!)

- 2 large carrots, shredded

- 3 green onions, thinly sliced

- 1 tbsp of fresh ginger

- 3 garlic cloves, minced

- 1 tbsp of Sriracha

- 1 tsp sesame oil

- 1 tsp soy sauce

- olive oil

- 1 English cucumber

- rice vinegar

- sesame seeds

- 1/4 cup water

- 1 package of wonton wrappers

Other options include mushrooms, zucchini, squash and peppers!

Before you start the potstickers, slice the cucumber really thin and cover about half way with rice vinegar, a tbsp of oil and pinch of S&P. Put in fridge until ready to serve.

In a large bowl combine the pork, veggies and grated garlic and ginger. Add the sesame oil, Sriracha and soy and mix well.

Next, lay out a large sheet of parchment paper and fill a small bowl with water. Ive found the best method to this is to lay out as many wonton sheets as you can fit on the parchment paper. Then you'll scoop out a spoonful of meat to each square, making sure not to over fill.

Once you've filled them with all of the meat, about 48 wontons, you'll wet your finger tips and run them along the edges. Seal each one by folding the opposite corners together. I prefer to make little "present" potstickers, but you could also just fold across and seal.

FYI: I usually make between 6-8 per person and then freeze the rest of them. Then you can just take out however many you want and pop them into a skillet to steam.

Next, heat a non-stick pan with 2 tbsp of olive oil and place the potstickers in spaced evenly. After the bottoms starts to crisp a little, 1-2 minutes, pour in about 1/4 of cup of water and cover. Let the potstickers steam for about 6 minutes, making sure there is enough water in the pan to create steam. Add a little more water if needed.

Take the potstickers up and serve with extra soy, Sriracha and marinated cucumbers - Enjoy!
