Simple Salmon 2-Ways


Salmon is a staple in my house because it's quick, easy to prepare and it also thaws really quickly if you forget to take something out! Here are two ways to bake perfectly cooked salmon E V E R Y single time. The trick is.....down below! You'll need:

Lemon Caper Salmon -

- Salmon (one per bag)

- 2 Lemons

- Olive Oil

- 2 tbsp of Capers

- Splash of White Wine

Costco is my one stop shop for most things, but especially this meal because of the fresh salmon, giant jar of capers, 10 lb bags of lemons and great selection of cheap wine! I don't drink a ton of white wine, but I LOVE to cook with it, and the Kirkland's Sauvignon Blanc is actually really good!

Start with a sheet of foil and place a piece of salmon in the middle. Drizzle olive oil, salt and pepper on top. Next, put as many capers as you like on top of the salmon. Slice a lemon in small rounds and place those on top of the capers. I usually squeeze about half a lemon on top in addition to the slices. Top with a splash of white wine and wrap up the foil loosely, folding or pinching the seams together. For the brussels, I just halved and tossed in olive oil, minced garlic, S&P and a squeeze of the remaining lemon.

Here is where my trick comes into play! DO NOT PREHEAT THE OVEN. The salmon goes into a cold oven, and yes you read that correctly! By starting with a cold oven, it allows the salmon to cook evenly through gradual heat. Once the salmon is in the oven, preheat to 400 degrees for 25 minutes. Take up, remove from foil and I promise it'll come out perfect every time!

Teriyaki Salmon -

- Salmon (one per bag)

- Soy Marinade (same one from my Mango Shrimp Taco recipes)

- 4 tbsp of soy

- 2 tbsp of olive oil

- 1 tsp of sesame oil

- 2 tsp of brown sugar

- 1 tsp of minced or grated garlic

- 1 tsp of grated ginger (optional)

- Red Pepper

- Onion

- Broccoli

You can really use any veggies here that you prefer. Zucchini, carrots and sugar snap peas are also great options! Here you have the option to put the veggies in the foil bags with the salmon. It really just comes down to how you want the veggies cooked - steamed or roasted. They definitely get a little more tender inside the bag with the salmon, but they have so much flavor!!

Marinade the salmon for an hour or so prior to putting in the oven. After prepping the veggies, place them on a large sheet of foil. The salmon will sit on a bed of whatever vegetables you choose. This will also ensure that they get some of that delicious marinade on them so they can soak up allll those yummy flavors.

Follow the same cooking directions above -- cold oven, 400 degrees, 25 minutes -- perfectly cooked salmon! For a little more substance, serve over white or brown rice! -- Enjoy!
