Spicy Cheez It
It's about that time of year where family and friends gather for holiday parties! These are the perfect addition to bring to any potluck and I swear there won't be a single one left! This is a pretty basic recipe for your classic cheese straw - just a tad bit spicy and shaped into tiny squares to resemble my favorite cheesy snack! You'll need:
- 8 oz sharp cheddar cheese, shredded
- 2 tsp of dried rosemary
- 1 stick of salted butter (8 tbsp), softened
- 2 tsp of dried rosemary
- 1 tsp of crushed red pepper flakes
- 1/4 tsp of cayenne pepper
- 1 1/2 cups of all-purpose flour
In a large mixer, add the shredded cheese and the butter together in mix together until well combined. If you only have unsalted butter, that's fine, just add a few extra pinches of salt to the mixer with the other dry ingredients. Next, stir the flour and spices together before adding to the cheese and butter mixture.
Combine into a crumbly dough, making sure there are no clumps of flour. I usually raise my mixer and scrape down the sides a few times to make sure it's well combined.
Lay out a large sheet of parchment paper and pour the dough onto the sheet. Roll into either a long round or square log, wrap and place in the refrigerator for a few hours.
Once ready to bake, preheat the oven to 375 degrees. Slice into thin circles or squares and place on an unlined baking sheet. Sprinkle the top of each cracker with flake salt, or a salt of your choice (I used pink Himalayan). Place in the oven for 12-15 minutes depending on thickness. Let cool and serve - Enjoy!
